Description

A delicious and healthy asparagus frittata that is perfect for breakfast or brunch.


Ingredients

  • 1 cup fresh asparagus, chopped
  • 6 large eggs
  • 1/2 cup whole milk (or almond/oat milk)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • to taste Salt and pepper
  • 1 tsp dried thyme or oregano

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an oven-safe skillet with olive oil.
  2. Sauté the chopped asparagus in the skillet over medium heat until tender-crisp, about 3-4 minutes.
  3. In a bowl, whisk together the eggs, milk, salt, pepper, and herbs until well combined.
  4. Fold in the grated Parmesan cheese gently.
  5. Pour the egg mixture over the sautéed asparagus and cook undisturbed for about 5-7 minutes until edges begin to set.
  6. Transfer the skillet to the oven and bake for 15-20 minutes until puffed and golden brown.
