A delicious and healthy asparagus frittata that is perfect for breakfast or brunch.
Ingredients

- 1 cup fresh asparagus, chopped
- 6 large eggs
- 1/2 cup whole milk (or almond/oat milk)
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- to taste Salt and pepper
- 1 tsp dried thyme or oregano
Instructions
- Preheat your oven to 375°F (190°C) and grease an oven-safe skillet with olive oil.
- Sauté the chopped asparagus in the skillet over medium heat until tender-crisp, about 3-4 minutes.
- In a bowl, whisk together the eggs, milk, salt, pepper, and herbs until well combined.
- Fold in the grated Parmesan cheese gently.
- Pour the egg mixture over the sautéed asparagus and cook undisturbed for about 5-7 minutes until edges begin to set.
- Transfer the skillet to the oven and bake for 15-20 minutes until puffed and golden brown.
Notes
- Feel free to swap the Parmesan cheese for another cheese of your choice.
- This frittata can be served warm or at room temperature.
- Great for meal prep and can be stored in the refrigerator for up to 3 days.
