- 2 large egg yolks
- 1/3 cup (65 g) sugar
- 2 tablespoons (20 g) cornstarch (or all-purpose flour)
- 10 fl oz (300 ml) hot milk
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup (100 g) sugar (for pastry)
- 4 oz (115 g) unsalted butter, softened
- 1 teaspoon vanilla extract (for pastry)
- Pinch salt
- 1 1/2 cups (190 g) all-purpose flour
- Fresh berries (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease the tartlet mold with butter and flour.
- Mix the egg yolks, 1/3 cup sugar, and cornstarch in a medium-sized pan until smooth.
- Gradually whisk in the hot milk continuously to prevent lumps.
- Heat the mixture over medium heat until it reaches a slow boil, then cook for a few more minutes. Refrigerate until cool.
- Beat 1 egg and 1/2 cup sugar until light and fluffy for the tartlet dough.
- Add softened butter, 1 teaspoon vanilla extract, a pinch of salt, and flour, mixing until combined.
- Wrap the dough in plastic wrap for at least 30 minutes.
- Roll the chilled dough to 1/8 inch thick and cut out rounds with a cookie cutter.
- Fit the dough into the tartlet mold and prick the bottoms with a fork.
- Bake the shells for 14-15 minutes until golden, then cool completely.
- Fill the custard into each tartlet shell and top with fresh berries before serving.
Notes
- Ensure the custard is fully cooled before adding to the tartlet shells.
- You can use any fresh berries of your choice for topping.
