Description

Delicious and moist blackberry muffins, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk (whole or any preferred type)
  • 1/2 cup unsalted butter (melted and cooled)
  • 1 cup fresh blackberries

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin pan or line it with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix melted butter, eggs, and milk until smooth.
  4. Gently fold fresh blackberries into the wet mixture.
  5. Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix.
  6. Divide the batter among muffin cups and bake for 20-25 minutes or until golden brown. A toothpick inserted should come out clean.
  7. Allow to cool slightly before enjoying.

Notes

  • If you prefer, you can replace blackberries with other berries.
