Delicious brown butter oatmeal raisin cookies that are puffy yet gooey.

- 3/4 cup unsalted butter, browned and cooled
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2/3 cup old-fashioned oats
- 1/2 cup raisins
Instructions
- Brown the butter over medium heat until golden brown and nutty in aroma. Allow to cool.
- Combine brown butter, brown sugar, and white sugar in a large bowl and mix until creamy.
- Add egg, egg yolk, and vanilla extract, mixing until well combined.
- Incorporate the flour, salt, and baking soda, mixing until cohesive.
- Fold in old-fashioned oats by hand until evenly distributed.
- Toss in raisins and fold gently to combine.
- Chill the dough in the refrigerator for at least 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop dough onto the baking sheet, placing them 2 inches apart.
- Bake for 11 minutes until edges are golden and centers are puffy but gooey.
- Allow to cool slightly before enjoying.
Notes
- Chilling the dough helps to solidify the butter, which will prevent the cookies from spreading too much in the oven.
- For a variation, add chocolate chips or nuts for extra texture and flavor.
