Description

Delicious brown butter oatmeal raisin cookies that are puffy yet gooey.


Ingredients

  • 3/4 cup unsalted butter, browned and cooled
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2/3 cup old-fashioned oats
  • 1/2 cup raisins

Instructions

  1. Brown the butter over medium heat until golden brown and nutty in aroma. Allow to cool.
  2. Combine brown butter, brown sugar, and white sugar in a large bowl and mix until creamy.
  3. Add egg, egg yolk, and vanilla extract, mixing until well combined.
  4. Incorporate the flour, salt, and baking soda, mixing until cohesive.
  5. Fold in old-fashioned oats by hand until evenly distributed.
  6. Toss in raisins and fold gently to combine.
  7. Chill the dough in the refrigerator for at least 30 minutes.
  8. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Scoop dough onto the baking sheet, placing them 2 inches apart.
  10. Bake for 11 minutes until edges are golden and centers are puffy but gooey.
  11. Allow to cool slightly before enjoying.
