A delicious and easy bruschetta chicken bake topped with fresh ingredients and mozzarella cheese.

- 4 boneless, skinless chicken breasts (about 1 lbs)
- 2 cups diced fresh tomatoes
- 1/4 cup chopped fresh basil
- 3 cloves minced garlic
- 1 cup shredded whole-milk mozzarella cheese
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Season the chicken breasts generously with salt and pepper on both sides.
- In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar; mix well.
- Place the seasoned chicken breasts in the baking dish and spoon the bruschetta mixture evenly over each breast.
- Sprinkle shredded mozzarella cheese on top of each chicken breast.
- Bake for 25-30 minutes until cooked through (165°F or 75°C) and cheese is bubbly.
Notes
- This dish goes well with a side of pasta or a fresh salad.
- For added flavor, marinate the chicken in the balsamic vinegar and olive oil for a few hours before baking.
