Description

A delicious and easy bruschetta chicken bake topped with fresh ingredients and mozzarella cheese.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lbs)
  • 2 cups diced fresh tomatoes
  • 1/4 cup chopped fresh basil
  • 3 cloves minced garlic
  • 1 cup shredded whole-milk mozzarella cheese
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar; mix well.
  4. Place the seasoned chicken breasts in the baking dish and spoon the bruschetta mixture evenly over each breast.
  5. Sprinkle shredded mozzarella cheese on top of each chicken breast.
  6. Bake for 25-30 minutes until cooked through (165°F or 75°C) and cheese is bubbly.
