Description

A comforting chicken noodle soup that warms the soul.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups egg noodles
  • 1 tablespoon olive oil
  • 1 teaspoon thyme (dried or fresh)
  • 1 teaspoon parsley (dried or fresh)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  2. Pour in the chicken broth and bring it to a boil. This will give a great base for the soup.
  3. Stir in thyme, parsley, salt, and pepper to taste, allowing the flavors to meld together.
  4. Add your shredded chicken to the pot. Allow the mixture to simmer for about 10 minutes.
  5. Add the egg noodles and cook until tender, usually around 7-10 minutes.
  6. Check seasoning and add more salt or pepper if needed.
  7. Ladle the soup into bowls and enjoy immediately.
