Description

This delicious herb-crusted rib roast is perfect for special occasions and will impress your guests with its tender, juicy meat and flavorful seasoning.


Ingredients

  • 56 pounds rib roast
  • 3 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • 2 cups beef broth

Instructions

  1. Preheat your oven to 500°F (260°C).
  2. In a small bowl, combine salt, pepper, garlic, rosemary, thyme, and olive oil to create a paste.
  3. Rub the paste all over the rib roast.
  4. Place the rib roast in a roasting pan, bone-side down.
  5. Roast in the preheated oven for 20 minutes.
  6. Reduce the temperature to 325°F (165°C) and continue to roast until a meat thermometer reads 130°F (54°C) for medium-rare.
  7. Remove the roast and let it rest for at least 20 minutes before slicing.
  8. Serve with au jus made from the drippings and beef broth.
