- 5–6 pounds rib roast
- 3 tablespoons kosher salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon olive oil
- 2 cups beef broth
Instructions
- Preheat your oven to 500°F (260°C).
- In a small bowl, combine salt, pepper, garlic, rosemary, thyme, and olive oil to create a paste.
- Rub the paste all over the rib roast.
- Place the rib roast in a roasting pan, bone-side down.
- Roast in the preheated oven for 20 minutes.
- Reduce the temperature to 325°F (165°C) and continue to roast until a meat thermometer reads 130°F (54°C) for medium-rare.
- Remove the roast and let it rest for at least 20 minutes before slicing.
- Serve with au jus made from the drippings and beef broth.
