Description

This banana bread is moist and delicious, perfect for using up overripe bananas.


Ingredients

Scale
  • 3 large bananas (overripe)
  • 1/2 cup cottage cheese (* See notes)
  • 1/2 cup unsweetened applesauce (or neutral flavored oil)
  • 1/2 cup sugar (** See notes)
  • 2 large eggs (room temperature)
  • 1 3/4 cups all-purpose flour (sifted)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 180C/350F. Line a 9 x 4-inch loaf pan with parchment paper.
  2. In a mixing bowl, add the mashed bananas, cottage cheese, applesauce, sugar, and egg and mix well.
  3. Add the flour, baking powder, and salt, and mix until combined.
  4. Transfer the batter into the lined pan.
  5. Bake the banana bread for 50 minutes or until a toothpick comes out mostly clean. If you notice the tops of the banana bread browning too quickly, cover with tin foil.
  6. Let the banana bread cool in the pan for 10 minutes before carefully transferring to a wire rack to cool completely.

Notes

  • For best results, use very ripe bananas.
  • You can substitute sugar with alternative sweeteners as desired.
