Description
This banana bread is moist and delicious, perfect for using up overripe bananas.
Ingredients

- 3 large bananas (overripe)
- 1/2 cup cottage cheese (* See notes)
- 1/2 cup unsweetened applesauce (or neutral flavored oil)
- 1/2 cup sugar (** See notes)
- 2 large eggs (room temperature)
- 1 3/4 cups all-purpose flour (sifted)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 180C/350F. Line a 9 x 4-inch loaf pan with parchment paper.
- In a mixing bowl, add the mashed bananas, cottage cheese, applesauce, sugar, and egg and mix well.
- Add the flour, baking powder, and salt, and mix until combined.
- Transfer the batter into the lined pan.
- Bake the banana bread for 50 minutes or until a toothpick comes out mostly clean. If you notice the tops of the banana bread browning too quickly, cover with tin foil.
- Let the banana bread cool in the pan for 10 minutes before carefully transferring to a wire rack to cool completely.
Notes
- For best results, use very ripe bananas.
- You can substitute sugar with alternative sweeteners as desired.
