Description

Delicious taco bowls featuring seasoned ground beef, roasted sweet potatoes, cottage cheese, and avocado, drizzled with hot honey.


Ingredients

  • 1 lb lean ground beef
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp kosher salt (more to taste)
  • ¼ tsp black pepper
  • 2 Tbsp tomato paste
  • ½ cup water
  • 1 lb sweet potatoes (2 medium potatoes)
  • 1 Tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 cups cottage cheese
  • 2 small avocados, diced
  • 2 Tbsp hot honey
  • cherry tomatoes & mixed greens (optional)

Instructions

  1. Preheat the oven to 425℉ (218°C). Line a sheet pan with parchment paper and spray with olive oil spray.
  2. Wash and peel your sweet potatoes. On a cutting board, use a sharp knife to cut them into 1 inch cubes. In a large bowl or directly on the baking sheet, coat the sweet potato cubes with olive oil, kosher salt, pepper, garlic powder, and smoked paprika.
  3. Add the sweet potatoes to the baking sheet in a single layer and bake in the preheated oven for 25-30 minutes. Oven times will vary.
  4. Heat a large skillet on medium heat. Add olive oil until heated. Add the ground beef and break apart the beef with a wooden spoon or masher. Cook for 2-3 minutes until the beef starts to brown and then add the seasonings, water, and tomato paste. Continue to cook until the beef is cooked through, about 5-7 minutes.
  5. Assemble the taco bowls by adding the cooked ground beef, cottage cheese, avocado, sweet potatoes, and tomatoes and greens (if using) to a serving bowl. Add a drizzle of hot honey on top.
  6. Hint: if you have an air fryer, you can make the sweet potatoes in it instead. Preheat your air fryer to 400℉ (200°C) for a couple of minutes. Add your seasoned sweet potato cubes to the air fryer basket in a single layer. Air fry for 10-12 minutes, giving them a good shake about 5 minutes through. Cook time may vary slightly depending on your air fryer.
