Ingredients

- 4 large flour tortillas
- 1 lb lean ground beef
- 1 cup pico de gallo
- 2 cups shredded cheddar and Monterey Jack cheese blend
- 1/4 cup sliced jalapeños (fresh or pickled)
- 1/2 cup sour cream
- 2 tbsp extra virgin olive oil
Instructions
- Preheat oven to 425°F (220°C).
- In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
- Stir in taco seasoning with a splash of water and let simmer until thickened.
- On each tortilla, layer the beef mixture, pico de gallo, and shredded cheese evenly.
- Place on a baking sheet lined with parchment paper and bake for 10-12 minutes until the cheese is bubbly and golden.
- Top with jalapeños and sour cream before slicing into wedges. Enjoy warm!
