Description

A delicious baked tortilla dish filled with ground beef, cheese, and fresh toppings.


Ingredients

  • 4 large flour tortillas
  • 1 lb lean ground beef
  • 1 cup pico de gallo
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup sour cream
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
  3. Stir in taco seasoning with a splash of water and let simmer until thickened.
  4. On each tortilla, layer the beef mixture, pico de gallo, and shredded cheese evenly.
  5. Place on a baking sheet lined with parchment paper and bake for 10-12 minutes until the cheese is bubbly and golden.
  6. Top with jalapeños and sour cream before slicing into wedges. Enjoy warm!
