Description

A delicious and healthy roasted turkey sausage and vegetables dish, perfect for easy weeknight dinners.


Ingredients

  • 12 oz turkey sausage, sliced into rounds
  • 2 cups bell peppers (red and yellow), chopped
  • 1 cup zucchini, sliced into half-moons
  • 1 cup red onion, chopped
  • 1 cup broccoli florets
  • 3 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Grated parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easier cleanup, if desired.
  2. Place turkey sausage, peppers, zucchini, onion, and broccoli on the large sheet pan.
  3. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper.
  4. Toss everything with your hands or a spatula to coat evenly. Spread in a single layer, ensuring not to overcrowd the pan for best roasting.
  5. Bake for 20-25 minutes, stirring halfway through, until veggies are tender-crisp and sausage is browned.
  6. Remove from oven. Top with grated parmesan cheese if desired, allowing the residual heat to melt it slightly.
