- 12 oz turkey sausage, sliced into rounds
- 2 cups bell peppers (red and yellow), chopped
- 1 cup zucchini, sliced into half-moons
- 1 cup red onion, chopped
- 1 cup broccoli florets
- 3 tbsp olive oil
- 1 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Grated parmesan cheese (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easier cleanup, if desired.
- Place turkey sausage, peppers, zucchini, onion, and broccoli on the large sheet pan.
- Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper.
- Toss everything with your hands or a spatula to coat evenly. Spread in a single layer, ensuring not to overcrowd the pan for best roasting.
- Bake for 20-25 minutes, stirring halfway through, until veggies are tender-crisp and sausage is browned.
- Remove from oven. Top with grated parmesan cheese if desired, allowing the residual heat to melt it slightly.
