Description

These delicious and nutritious muffins are made with ripe bananas and natural peanut butter, making them a great option for breakfast or a snack!


Ingredients

  • 2 ripe bananas, mashed (approx. 200g)
  • 1/2 cup natural peanut butter (creamy)
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats (blended into flour) (135g)
  • 1 scoop vanilla protein powder (25g)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, combine the mashed bananas, peanut butter, eggs, honey or maple syrup, and vanilla extract. Whisk until the mixture is smooth and well combined.
  3. Add the blended oat flour, protein powder, and baking powder to the wet ingredients. Stir gently until just combined, being careful not to overmix.
  4. If using, fold in the dark chocolate chips until they are evenly distributed throughout the batter.
  5. Divide the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
  7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a healthier option, use maple syrup instead of honey.
  • Make sure the bananas are very ripe for the best flavor.
