- 2 pounds flank steak
- 1 pound baby potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, garlic, salt, pepper, rosemary, and thyme.
- Add flank steak to the bowl, ensuring it is well-coated with the marinade. Allow to marinate for at least 30 minutes.
- Place potatoes in a baking dish and drizzle with olive oil, salt, and pepper.
- Arrange the marinated flank steak on top of the potatoes.
- Bake in the preheated oven for 30-35 minutes or until the steak reaches your desired level of doneness.
- Let the steak rest for 10 minutes before slicing.
- Serve slices of flank steak with roasted potatoes on the side.
