Ingredients

  • 1 pound baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, garlic, salt, pepper, rosemary, and thyme.
  3. Add flank steak to the bowl, ensuring it is well-coated with the marinade. Allow to marinate for at least 30 minutes.
  4. Place potatoes in a baking dish and drizzle with olive oil, salt, and pepper.
  5. Arrange the marinated flank steak on top of the potatoes.
  6. Bake in the preheated oven for 30-35 minutes or until the steak reaches your desired level of doneness.
  7. Let the steak rest for 10 minutes before slicing.
  8. Serve slices of flank steak with roasted potatoes on the side.
