Description

Delicious chicken tacos made with shredded rotisserie chicken and fresh toppings.


Ingredients

  • 3 cups rotisserie chicken, shredded
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the shredded rotisserie chicken and taco seasoning, stirring until heated through, about 3-4 minutes.
  2. Warm the tortillas in a dry skillet or microwave until soft and pliable.
  3. Assemble each taco by placing a generous amount of the chicken onto the tortillas.
  4. Top with shredded lettuce, diced tomatoes, cheddar cheese, and cilantro.
  5. Finish with a dollop of sour cream and spoonful of salsa. Serve immediately.
