Description

A delicious one-pot meal featuring tender chicken thighs, aromatic basmati rice, and a mix of spices.


Ingredients

  • 1 lbs boneless chicken thighs
  • 2 cups basmati rice
  • 1 large yellow onion, diced
  • 2 medium tomatoes, diced (or 1 can)
  • 4 garlic cloves, minced
  • 2 tsp kabsa spice mix
  • 3 cups chicken broth
  • 1/2 cup raisins or sultanas
  • 1/4 cup almonds or pine nuts (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Sauté the diced onions until translucent, then add minced garlic.
  2. Add the boneless chicken thighs and season with salt and pepper. Brown on all sides for about 5-7 minutes.
  3. Stir in the diced tomatoes and kabsa spice mix. Simmer for about 10 minutes until tomatoes soften into a sauce.
  4. Pour in rinsed basmati rice and chicken broth; bring to a boil. Reduce heat to low, cover, and cook for 20-25 minutes.
  5. Five minutes before cooking is complete, sprinkle raisins on top without stirring.
  6. Once done, remove from heat and let rest for an additional 10 minutes before serving.

Notes

  • Ensure the rice is well rinsed before adding to the pot for better texture.
  • Feel free to substitute raisins with sultanas for a slightly different flavor.
