This creamy spinach artichoke pasta bake is a delicious and comforting dish that’s perfect for any occasion.


Ingredients

  • 8 oz penne pasta
  • 2 cups fresh spinach
  • 1 cup artichoke hearts, drained
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 1/2 cup sour cream
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil salted water in a large pot and cook penne until al dente; drain.
  3. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant (3-4 minutes).
  4. Add spinach and artichoke hearts; sauté until spinach wilts (2-3 minutes).
  5. Reduce heat and mix in cream cheese, sour cream, mozzarella, Italian seasoning, salt, and pepper until creamy.
  6. Combine cooked pasta with the sauce and vegetables in a large bowl.
  7. Transfer to a greased baking dish, top with remaining mozzarella and Parmesan.
  8. Bake uncovered for 25-30 minutes or until golden brown.

Notes

  • For a spicier kick, consider adding red pepper flakes.
