- 1 cup almond flour
- 1/2 cup natural peanut butter
- 1/4 cup sugar-free sweetener (like erythritol or monk fruit)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, baking soda, and salt. Whisk well to break up any lumps.
- In another bowl, blend together peanut butter, sugar-free sweetener, and vanilla extract until smooth and creamy.
- Beat in the egg until fully incorporated into the peanut butter mixture.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a fork to create a crisscross pattern.
- Bake for 10-12 minutes or until golden brown. Keep an eye on them as oven temperatures may vary.
- Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For a nuttier flavor, add chopped nuts or chocolate chips to the dough.
