Ingredients

  • 1/2 cup natural peanut butter
  • 1/4 cup sugar-free sweetener (like erythritol or monk fruit)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, baking soda, and salt. Whisk well to break up any lumps.
  3. In another bowl, blend together peanut butter, sugar-free sweetener, and vanilla extract until smooth and creamy.
  4. Beat in the egg until fully incorporated into the peanut butter mixture.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each cookie slightly with the back of a fork to create a crisscross pattern.
  8. Bake for 10-12 minutes or until golden brown. Keep an eye on them as oven temperatures may vary.
