Description

A delicious and hearty ham and potato soup that warms you from the inside out.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 2 medium carrots (diced)
  • 2 medium russet potatoes (peeled and cubed)
  • 2½ cups reduced sodium chicken broth
  • 1½ cups cooked ham (diced)
  • 1 (10 ounce) can condensed cream of celery soup
  • 4 ounces Velveeta (cubed)
  • ¼ teaspoon black pepper (or to taste)

Instructions

  1. Heat the oil in a large pot over medium heat. Add onion and cook until translucent, about 3 minutes.
  2. Add carrots, potatoes, and chicken broth to the pot. Simmer until vegetables are tender, about 10 minutes.
  3. Stir in condensed soup, Velveeta, and ham. Mix until Velveeta is melted and fully combined. Season with pepper.

  • This soup can be made ahead of time and frozen for later use.
