Description

Delicious cookies featuring chocolate-covered coffee beans for a unique flavor.


Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate-covered coffee beans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Gently fold in the chopped chocolate-covered coffee beans.
  6. Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

  • Substitute all-purpose flour with gluten-free flour if necessary.
  • The molasses content in brown sugar gives depth of flavor and moisture.
