- 1/2 cup chocolate-covered coffee beans, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the chopped chocolate-covered coffee beans.
- Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Substitute all-purpose flour with gluten-free flour if necessary.
- The molasses content in brown sugar gives depth of flavor and moisture.
- Chocolate-covered almonds or hazelnuts can be used as substitutes for the coffee beans.
